Almond Cookies with Agave Nectar
2½ cup almond flour
½ tsp sea salt
¼ tsp baking soda
1 tsp cinnamon
¼ cup virgin coconut oil
5 tbsp agave nectar
1 tsp vanilla extract
Preheat oven to 350 degrees.
In a large mixing bowl combine almond flour, baking soda, sea salt and cinnamon. Melt coconut oil over low heat. Stir in agave nectar and vanilla. Add wet ingredients to dry and mix well. Refrigerate dough for 15 minutes to chill. Roll a teaspoon at a time into half inch balls; place on greased baking sheet and flatten. Bake 6-7 minutes or until lightly browned. Remove from oven, cool and store in an airtight container.
Makes about 30.
